But what do we mean when we say “carbonated”? Let’s take a closer look at the science behind carbonation in RTDs and how it affects their flavor and texture. 

What is Carbonation?

Carbonation is simply the addition of carbon dioxide to liquids, which produces bubbles and fizziness as the gas is released. This process can occur naturally or be forced into a liquid by injecting or dissolving gas into it. In RTDs, carbonation is usually achieved through forced injection, which allows manufacturers to control the level of carbonation in each drink. This allows them to customize drinks to suit different tastes and preferences. 

How Does Carbonation Affect Flavor? 

The amount of carbonation in a particular drink can dramatically affect its flavor profile. High levels of carbon dioxide can give drinks a sharp, acidic taste, while lower levels tend to produce smoother flavors that are easier on the palate. The type of sugar used in an RTD also has an effect on its flavor profile; natural sugars such as fructose or glucose impart different flavors than artificial sweeteners like sucralose or aspartame. Finally, temperature plays an important role; colder temperatures can make sweeter drinks seem even sweeter, while warmer temperatures may make them seem less sweet. 

How Does Carbonation Affect Texture? 

The amount of carbon dioxide in a beverage also affects its texture and mouthfeel. Higher amounts of CO2 will create a more fizzy sensation when drinking, while lower amounts will result in a smoother texture with less fizziness. Too much CO2 can also cause excessive foaming or over-carbonation—a phenomenon where excess gas escapes from the beverage after it has been opened—which can be unpleasant and off-putting for some consumers. 

Carbonation plays an important role in creating the flavor and texture profiles of RTDs that have come to be expected by consumers around the world. By understanding how CO2 affects these qualities, manufacturers are better able to craft unique RTDs tailored specifically to their customers’ tastes and preferences.
